Tandoori Chicken Fajita's

Ingredients:

4 tortilla wraps

2 chicken breasts, sliced

1 onion, sliced

2 cloves garlic, diced   

                            

Marinade:

3 tsp tandoori powder

1 tsp garlic powder

1 tsp onion powder

3 tbsp soy sauce

 

Yoghurt Dressing:

4 tbsp of natural yoghurt

Handful coriander, chopped

5 inch cucumber, diced

1/2 lime

 

Greens:

Handful stemmed broccoli

Handful rocket                                        

                                                               


 

Method:

1) Place your chicken into a container, mix together with the tandoori powder, onion powder, garlic powder and soy sauce, season with salt and pepper and refrigerate for 30 mins + (you can now prep the rest of your ingredients)

2) Begin by adding some water to a saucepan and bring to the boil, add some olive oil or frylight to a separate frying pan and gently heat on low.

3) Add the marinaded chicken, sliced onion and garlic to the frying pan, stirring until cooked through. (Keep the container for later!) Place the broccoli into the boiling water and cook for 6-8 mins.

4) Meanwhile, to make the dressing, mix together the yoghurt, cucumber and chopped coriander, season well and squeeze in 1/2 lime. 

5) To create a very slight sauce for the chicken/onion mix, add a little water to any remaining marinade in the container and pour into the frying pan. Stir in some chopped coriander and season.

6) Heat your tortillas in the microwave for 30 seconds, place onto a place and you're ready to build your fajitas!
