Smashed Avocado on Toast with Radish & Rocket

Ingredients:

1 slice wholemeal bread                                                                 

1/2 avocado, mashed                                                                                           

A handful rocket leaves                                   

1 radish, sliced        

1 tsp fat free french dressing

1 tsp chia seeds     

 

Method:

1) Slice the avocado in half, remove the seed and scoop out the flesh. Mash with a fork and season.

2) Place the bread in the toaster and while it's cooking, mix the rocket leaves in a bowl with the french dressing and slice the radish thinly.

3) Once the toast is ready, spread the avocado on top, lay the radish out and sprinkle with chia seeds, and garnish with the rocket leaves.
