HEALTHY TURKEY LASAGNE

Ingredients:

225g lean turkey mince

1 courgette, sliced lengthways   

1 small onion, diced

2 cloves garlic, chopped

1 tsp paprika

1tsp garlic powder

1 tsp nutmeg

1/2 tin chopped tomatoes

A pinch of mixed herbs

75g cream cheese

A handful of kale, chopped or blended

1 egg yolk

50g shredded mozzerella

Extra virgin olive oil

Cooking spray

Method:

Preheat oven to 170 C/350F/gas mark 4

Gently fry the onion and garlic in a splash of olive oil until soft. Add the turkey mince, paprika, garlic powder and nutmeg. Cook until browned.

Meanwhile, carefully slice your courgettes lengthways and lay the first layer in a dish that's been sprayed with cooking oil.

Put the chopped tomatoes in a saucepan on a low heat, add the herbs, season and simmer.

In a bowl, mix together the cream cheese, kale and egg yolk and season.

Once you're ready, layer the turkey mix ontop of the sliced courgette, top with the cream cheese and then the tomato. Keep layering until your dish is full.

Top with mozzarella and bake for 30 min or until cheese is bubbling.

 

Cut into two portions and serve with a green side salad, enjoy!
