Corn & Courgette Fritters

Ingredients:

1/2 courgette, grated                                                              

100g sweetcorn                                    

1 spring onion, diced                            

 1 tsp basil pesto

1 clove garlic, diced

 2 heaped tbsp flour

1/2 egg, whisked


Method:

1) Place the grated courgette into a sieve over the sink and squeeze out the liquid. Transfer into a large mixing bowl and mix together with the sweetcorn, spring onion, garlic, pesto and egg.

2) Sieve the flour into the mix, stir well and season with salt & pepper.

3) In a large frying pan, heat up a generous splash of olive oil and spoon the mixture into rounds. Flatten with a spatula and cook for approx 5 mins each side (or until golden brown).


serving suggestion : Serve with smashed avocado & poached egg
