Carrot & Potato Rosti's

1 large carrot, grated                                                                           

1 medium potato, peeled & grated                                                                                 

1/2 onion, grated                                                 

1 tsp oregano

1 tsp honey   

1 tbsp Worcestershire sauce

1/2 egg, whisked

1 tbsp olive oil


1) Place the grated carrot, potato and onion into the middle of a tea towel, bundle the top together and squeeze over the sink to get rid of as much liquid as possible.

2) Place the mix into a large bowl and add the egg, honey, oregano and Worcestershire sauce. Mix well and season.

3) Heat the olive oil in a large frying pan and place a round metal cutter into the pan. Fill the cutter with the mix, press down firmly and release the cutter slowly. 

4) Fry for approx 5 mins each side (or until golden brown).

Serving suggestion: Serve with smashed avocado and a poached egg.
