Serves: 2

Prep Time: 10 mins

Cook Time: 10 mins

Difficulty: 7/10

Ingredients:

1 large carrot, grated

1 medium potato, peeled & grated

1/2 onion, grated

1 tsp oregano

1 tsp honey

1 tbsp Worcestershire sauce

1/2 egg, whisked

1 tbsp olive oil

Method:

1) Place the grated carrot, potato and onion into the middle of a tea towel, bundle the top together and squeeze over the sink to get rid of as much liquid as possible.

2) Place the mix into a large bowl and add the egg, honey, oregano and Worcestershire sauce. Mix well and season.

3) Heat the olive oil in a large frying pan and place a round metal cutter into the pan. Fill the cutter with the mix, press down firmly and release the cutter slowly.

4) Fry for approx 5 mins each side (or until golden brown).

Serving suggestion: Serve with smashed avocado and a poached egg.

About Jasmine // I'm a girl who loves her food and can put away a hefty amount when I want to, so to stay in shape (both physically and mentally) I've come up with the idea that if you eat better, you can eat more! I'm a sucker for pies, pastries and anything battered, ice-cream by the tub and biscuits by the packet, so with these habits, I knew I needed to start making my healthy foods taste just as awesome as all of these (or as close to at least!) to keep me satisfied. Luckily my biggest passion is cooking and it's how I'll spend any free time I have, so I've spent my time making super delicious recipes that leave you wanting more without the dreaded guilt-factor. I'd also like you to note that balance is key, I share my healthy recipes for healthy inspiration but I'm all for a glass of wine and chocolate when it's needed so please make sure you enjoy your food in a balanced diet. (For soulo is all about doing what's good for the soul remember!!)
