INGREDIENTS:


1/2 onion, chopped

1 rasher bacon, chopped

1/2 tin baked beans

smoked paprika (or plain)

garlic powder

onion powder

mixed herbs

1 egg

1/2 avocado, sliced and seasoned

extra virgin olive oil          

 


METHOD:

1) Heat a splash of olive oil in a saucepan and gently fry the onion on a low heat until soft, throw in the bacon and add a sprinkle of the garlic powder, onion powder and herbs. Stir and cook for 3-4 mins.

2) Pour the baked beans into the pan, sprinkle a few dashes of the paprika in and season with salt & pepper. Stir well, cooking for about 5 mins.

3) Meanwhile, heat some oil in a frying pan and fry your egg.

4) Pour your bean mix into a bowl and top with the egg and avocado.
